Banana Soda Bread Recipe

Everyone loves soda bread so why not add some banana for an extra twist – perfect tea time treat.

Serves 4- 10 mins to prepare and 30 mins to cook

250g (8oz) self raising wholemeal flour
250g (8oz) plain flour
Pinch of salt
1/2 tsp bicarbonate of soda
2 tbsp golden caster sugar
300ml (1/2pint) buttermilk
2 ripe bananas

Preheat oven to gas 6, 200ºC, 400ºF.  Place the flours, salt, bicarbonate of soda and sugar into a large bowl and combine together.  Add the buttermilk and bananas, mix together to form a soft dough. 

Tip onto a floured board and lightly knead.  Cut dough in half and form into 2 round shape with a smooth top.  Place on a non-stick baking tray and cut a large cross on the top.  Bake for about 30 minutes or until golden and sounds hollow when base is tapped. Allow to cool slightly and serve thickly sliced and buttered.
