Grilled Chipotle Salmon Tacos with Mango Salsa Recipe

Make the most of this season's mangoes with this fantastic taco recipe, the rich salmon contrasts perfecectly with the fresh zesty mango salsa.
Serves 4 - 5 mins to prepare and 15 mins to cook - 349 calories / serving



Ingredients

500g (1lb) salmon fillet
1 tsp garlic salt
1 tbsp chipotle purée or sauce, or other chilli sauce
1 tbsp smoked paprika
1 tbsp soft brown sugar

For the mango salsa
2 small mangoes
1 small red onion
2 tbsp fresh coriander
1 lime

To serve
4 small soft tortillas
finely shredded white cabbage
sour cream
chipotle sauce or other hot sauce


Rub the salmon with the garlic salt, chipotle purée, smoked paprika and sugar. Season to taste. Heat the grill and cook on one side until cooked through (about 5-7 minutes depending on the thickness). If using an oiled grill pan, keep the heat medium-low so the fish doesn’t burn. Turn the salmon pieces over to grill the other side.

Meanwhile, toss the mango salsa ingredients in a small bowl. Season to taste.

Flake the salmon and serve warm in soft tortillas with the mango salsa, shredded cabbage, sour cream and hot sauce.
