Moroccan Minced Beef Pie

Try something a little different instead of your go to cottage pie, spice it up a little with this Moroccan minced beef pie.

30 minutes  30 minutes - Serves: 4

400g pack lean minced beef
1 onion, chopped
4 tsp harissa paste
400g can chickpeas, drained and rinsed
400g can chopped tomatoes
400ml hot beef stock
150g Waitrose Love Life Wholewheat Couscous
½ x 28g pack coriander, chopped

1. Preheat the oven to 200°C, gas mark 6. Fry the beef and onion to brown. Add the harissa paste and cook for 1-2 minutes. Stir in the chickpeas, tomatoes and 100ml stock, cover and cook for 5-6 minutes. Transfer to an ovenproof serving dish.

2. Meanwhile, place the couscous in a bowl, add the remaining hot stock, cover and leave for 5 minutes. Fluff up with a fork and add the fresh coriander, spoon over the beef mince and bake for 20 minutes.
