Spicy Singapore Noodles Recipe

Transport your tastebuds to Singapore with this authentic noodle dish, loaded with lean turkey mince, fragrant King prawns and rich spices.

Serves 4 - 15 mins to prepare and 15 mins to cook - 294 calories / serving

2 tbsp groundnut oil
1 onion, halved and cut into thin wedges
2 tsp each minced garlic and ginger
1 fat red chilli, deseeded and cut into thin strips
1 red pepper, cored, deseeded and cut into thin strips
2 tsp mild curry powder
1 tsp turmeric
225g (7 1/2oz) turkey lean breast mince
4 tbsp soy sauce
325g (11oz) fresh singapore noodles
4 spring onions, trimmed and thinly sliced
160g (5 1/2oz) cooked & peeled King prawns with chilli and coriander
2 medium eggs, beaten

Heat the oil in a large wok or frying pan and fry the onion for 2 minutes until softened. Stir in the minced garlic, ginger, chilli, red pepper, curry powder and turmeric and stir-fry for 1-2 minutes. Add the minced turkey and soy sauce and stir fry for 3 minutes, breaking the mince down with the back of a wooden spoon ensuring it is cooked through.

Add the noodles, spring onion and prawns and stir fry for 2-3 minutes until warmed through. (you may need to add a 1-2tbsp water at this stage if the noodles dry out a little)  Push everything to one side of the pan and pour the beaten egg into the other side - cook stirring until scrambled. Stir well to combine all the ingredients and serve immediately with lime quarters to squeeze over.
