Spiced Apple Crumble

A classic pudding that everyone is sure to enjoy.

Preparation time: 10 minutes - Cooking time: 45 minutes - Serves: 6-8

6 large bramley apples, peeled, cored and roughly chopped
2-3 tbsp light brown soft sugar (to taste)
1 lemon, long twist of zest, juice of all
1 fresh bay leaf
double cream, to serve

250g plain flour 
1 tbsp cinnamon
2 tsp ground ginger
100g light brown soft sugar
1 tsp fine sea salt
200g butter, cold and cut into small cubes
150g jumbo oats
½ lemon, zest

1. Preheat the oven to 200˚C, gas mark 6. Combine the apples, sugar, lemon zest and juice, bay leaf and 150ml water in a 1.8-litre oven dish. Put in the oven and bake for 10 minutes.

2. Meanwhile, for the crumble, mix the flour, spices, sugar and salt in a bowl. Add the butter and rub in to form a crumb, being careful not to overwork it into a pastry dough. Lightly mix through the oats and lemon zest.

3. Scatter the crumble mixture over the top of the apple. Do not pat it down or it will not cook in the way it should. Bake for about 35 minutes, until the apple is bubbling, and the top is dark brown and crunchy. Serve the crumble straight away, with the double cream.
