Avocado, Tahini and Green Pea Smash

A delicious fresh dip that is perfect with your favourite bread toasted or some crunchy fresh veg.

Preparation time: 20 minutes - Cooking time: 5 minutes - Serves: 4-6 as a dip

150g peas (fresh or frozen)
1 ripe avocado
2 tbsp tahini paste, stirred
2 garlic cloves, crushed
½ lemon, juice, plus extra to season
2 tbsp roughly chopped coriander leaves (optional)

1. Boil the peas in lightly salted water for 3-4 minutes then refresh under cool water and drain well. Transfer to the small bowl of a food processor. Scoop out the avocado flesh and add to the peas with the remaining ingredients.

2. Whizz until blended and almost smooth, stopping to scrape down the sides every now and then. Season and add a little more lemon juice, if needed. Serve with a platter of toasted flatbreads and crunchy raw vegetables for dipping.
